Pickled Red Onions

1 red onion
1 dried chile pepper
3/4 cup vinegar
3 tsp sugar
1 bay leaf
1 pinch of salt
5 dried cloves

With an adult, heat vinegar, salt, seasonings and chile until boiling.

Add sliced red onions, then let simmer for about a minute.

Remove from heat and let cool completely.

Refrigerate the onions and liquid. Use with grilled meats and in salads.
